Honey-Apple Granola
Ingredients:
3 cups rolled oats
1/2 cup finely chopped fresh apples
1/2 cup chopped nuts (e.g. almonds, pecans, or walnuts)
1/2 cup unsweetened coconut flakes
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon salt
1/3 cup honey
1/4 cup melted coconut oil
1 teaspoon vanilla extract
Instructions:
Preheat the oven to 275°F (135°C). Line a baking sheet with parchment paper.
In a large mixing bowl, combine the rolled oats, apples, nuts, unsweetened coconut flakes, ground cinnamon, ground ginger, and salt. Mix well.
In a small saucepan, warm the honey, melted coconut oil, and vanilla extract over low heat. Stir until the mixture is smooth and well combined.
Pour the honey mixture over the dry ingredients and mix well, making sure that everything is evenly coated.
Spread the granola mixture in a single layer on the prepared baking sheet.
Bake for 45 minutes to an hour, or until the granola is golden brown and crisp. Be sure to stir the granola every 10 minutes or so to ensure even baking.
Remove the baking sheet from the oven and let the granola cool completely on the sheet. Once cooled, store the granola in an airtight container at room temperature for up to 2 weeks.
